7 Cup Cake/ Barfi

7 CUP SWEET/ CAKE/BARFI

The amount of ingredients summed up equals 7 cups! That’s how this sweet gets its name! Very delicious and highly addictive! This traditional South Indian sweet looks like Mysore Pak, taste amazing, and is very easy to make! You need a ton of patience to perfect any Indian sweet! This one is no exception! 

7 CUP SWEET/ CAKE/BARFI

Continuous stirring in medium heat gives this sweet its amazing texture and flavor! I’ve used @suncorefoods Canary yellow safflower superfood powder for that amazing color and flavored it with cardamom and a pinch of saffron! Try this sweet and I bet you will repeat this every Diwali 🪔 

7 CUP SWEET/ CAKE/BARFI

Reducing sugar and cooking even a second longer can result in a chewy barfi yet delicious!

Here you go with the recipe! 

Ingredients:

Milk- 1cup

Coconut-1/2 cup

Besan – 1 cup

Sugar- 3 cups or 2.5 cups

Ghee – 3/4 cup

Oil- 1/4 cup

Cashew nut powder- 1/4 cup

Almond flour- 1/4 cup

Suncore foods canary yellow safflower powder- 1 tsp

Cardamon powder- 1/4 tsp

A pinch of saffron

Method:

Grease a plate with very little ghee and set it aside. 

Take 2 tbsp of ghee in a Kadai or deep min stick own and add the began. Roast the Besan for 3-4 mins. Do not brown.

After roasting,  Add all the remaining ingredients and keep stirring till it forms a mass, and start to leave the sides of the pan.  You can test whether the mixture is ready by taking a small amount and forming a ball. If you can form a ball then you are ready to remove the mixture from the heat. this will take around 30 mins. 

Pour the mixture onto the greased plate and set aside. Once the barfi is set cut into disused shapes and enjoy!
