Thengai Barfi / Coconut Barfi

COCONUT BARFI

Thengai barfi – A quintessential sweet made during Diwali in every south Indian household. A sweet that is very close to my heart! This is a condensed milk version and it tastes amazing! Adding @suncorefoods Emerald pandan leaf superfood powder makes it even more special! I highly recommend it!

This barfi will not be hard but will be on the juicier side. I’ve added vanilla extract as I love vanilla-flavored coconut barfi. If you haven’t tried it give it a try! You’ll never be disappointed!

You could very well flavor it with cardamon it rose water if you are not a fan of vanilla. I’m sure you’ll love this delicious barfi!

COCONUT BARFI

Here you go with the recipe:

Coconut barfi with Emerald pandan leaf super color powder

Ingredients 

Freshly Grated or desiccated coconut- 2 cups( grate only the white part)

Condensed milk- 1/2 cup

Sugar- 1/4 cup

Vanilla extract – 1 tbsp of cardamom powder- 1 tsp

Emerald pandan leaf superfood powder- 3 tbsp whisked with 1-2 tsp water

Ghee or clarified butter- 2 tbsp

Method:

Grease a pan or plate with little ghee and set aside.

In a large pan preferably non-stick,  add the grated coconut, condensed milk, and sugar. Keep it on low to medium flame and stir well. Keep stirring the mixture till it dries up for about 7- 10 mins. Now add the ghee, superfood mixture, and vanilla extract and cook for about five mins till the mixture forms together like a dough. You can test whether the mixture is ready by taking a small amount and forming a ball. If you can form a ball then you are ready to remove the mixture from the heat.

Transfer the mixture onto the greased plate and flatten the top with the spatula. Allow the barfi to set completely outside or in the refrigerator before slicing. Enjoy!
