Texas Sheet Cake With Kefir

Here you go with the recipe;

Ingredients 

Sheet cake 

1 cup all purpose flour

1 cup granulated sugar

1/4 cup cocoa powder

1/2 tsp baking soda

1/4 tsp kosher salt

1 tsp espresso powder

1 egg

1 tsp vanilla extract

1/4 cup Lifeway cultured kefir, plain unsweetened 

1/2cup olive oil

1/2 cup hot water

Frosting

1 cup pecan roughly chopped and toasted

1/2 cup butter

3 tbsp cocoa powder

1/2 tsp espresso powder

1/4cup heavy cream

2 cups confectioners sugar 

1/4 tsp kosher salt 

Method:

Preheat the oven to 350f and spray and  line a quarter sheet pan with parchment paper.

In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder and espresso powder.

Next in another small bowl whisk together the egg, vanilla, kefir and oil. Pour the wet ingredients over the dry ingredients and mix well using a whisk. Now add the hot boiling water to the batter and mix well using a whisk. Pour the batter to the prepared sheet pan and bake for 22 mins until done.

Now while the cake is baking start making the frosting. In a heavy bottom pan over low – medium heat melt the butter. Once the butter is melted remove from heat and add the remaining frosting ingredients except pecans. Whisk until smooth. Now place the pan back to the stove and keep simmering for 5 mins until the frosting is smooth in low heat. After 5 to ten mins add the pecans. Pour the hot fudge over the warm cake and spread using a spatula. Slice and enjoy!
