Rose Pink Pitaya Pannacotta

ROSE PINK PITAYA PANNACOTTA

Rose Pink Pitaya Pannacotta- Rich Coconut pannacotta flavored with rose and cardamom. It has that beautiful pink hue all from Suncore foods pink pitaya superfood color. Beautiful and delicious 😋

This pannacotta is vegan but if you want you can substitute the coconut milk with half and half or heavy whipping cream. It tastes awesome either way. I’ve used agar powder to set the pannacotta but you can substitute gelatin if that’s what you have in your pantry. Feel free to adjust the sugar accordingly. I love cardamom and rose flavor but if you are not a fan of either of these just use a tsp of vanilla extract or scrape a vanilla bean and add it to the mixture.

Here you go with the recipe: 

Ingredients:

Pannacotta:

Rosewater – 1 tsp

Suncore foods Pink pitaya powder- 1 tsp

Full-fat canned Coconut milk – 1.5 cup

Canned Coconut cream – 1/2 cup

Cardamom powder – a pinch

Agar-agar – 1.5 tsp ( if you prefer firmer texture use 2 tsp agar) 

Granulated sugar – 1/4 cup adjust to taste accordingly 

Rosewater :

Suncore Foods Dried rose petals – 1/2 cup

Water – 2 cups

Rosewater syrup: 

Sugar- 1 cup

Rosewater – 1/2 cup

Water – 1/2 cup

Cardamom powder – 1/2 tsp 

Suncore foods Pink pitaya powder – 1/2 tsp

Lemon juice – 1 tsp

Method:

To make the rose water :

Add the dried rose petals and water to a pot. Let it simmer for ten mins covered or till the petals turn white. Filter the rose water through a sieve and set it aside to cool completely.

To make the rose syrup:

Simmer all the ingredients listed under rose water syrup very gently ( do not boil) for 5 mins to 6 mins till the syrup becomes thick enough to coat the back of a spoon.

Set aside to cool completely.

To make the pannacotta:

Add all the ingredients listed under pannacotta in a pot and mix well and then simmer till it reaches a boil. Leave it to boil for 30 sec more. Agar-agar and sugar must be completely dissolved.

Cool it completely. Pour into lightly oiled bowls/ramekins and loosely cover and allow to set in the refrigerator for at least  5 hours. Once set, invert onto a plate and spoon some rosewater syrup on top just before serving and enjoy!
