Raspberry Swirl Muffins

Here you go with the recipe:

Ingredients:

For the Muffins:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup Lifeway Unsweetened Plain Kefir
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For the Raspberry Swirl:

  • 1/2 cup fresh raspberries
  • 2 tablespoons granulated sugar

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon

Instructions:

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.

Prepare Streusel Topping: In a small bowl, combine the flour, sugar, and ground cinnamon. Add the cold cubed butter and mix with a fork or pastry cutter until the mixture resembles coarse crumbs. Set aside.

Prepare Raspberry Swirl: In a separate small bowl, mash the raspberries with granulated sugar until well combined. Set aside.

 In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the Lifeway Unsweetened Kefir, melted butter, eggs, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; the batter should be slightly lumpy.

Gently fold the raspberry mixture into the muffin batter, creating a swirl effect.

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Sprinkle the prepared streusel topping evenly over each muffin.

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
