Ingredients:

  • 11/4 cups all-purpose flour
  • 2/3 cup almond flour
  • 11/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup Lifeway Organic Plain Whole Milk Grass fed Kefir 
  • 3/4 cup olive oil
  • 3 large eggs
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 2 teaspoon vanilla extract

Instructions:

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan.
  • In a medium bowl, whisk together the flour, almond flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, whisk together sugar, kefir, olive oil, eggs, orange zest, orange juice, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to over-mix.
  • Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 35-45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

  • 4 cups vegetable broth
  • 1 medium onion, diced

  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil or coconut oil
  • Fresh cilantro or parsley for garnish
  • Lime wedges for serving

Instructions:

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and grated ginger. Sauté until fragrant and translucent.
