A hot beverage most popular in India where hot milk is made to boil with spices and black tea, then filtered and served with rusks or biscuits which are usually dunked into the chai and eaten!! Nothing like having a glass of chai in the evening with biscuits! They are soo warm and comforting, especially during cold weather!

I’m basically a coffee person and so is my husband. I rarely make chai at home. I do love green tea and the masala one. So I decided to make one for myself. But when I made this chai, very lately I discovered that my husband too loves tea especially the masala one as much as he loves coffee! He very well enjoyed his steamy masala chai with biscuits! I was very glad that he liked it!

Oh, my. Only then it struck me that I haven’t blogged about this recipe yet. So here I am writing the blog post on masala chai! As far as the spices are concerned it is totally up to you.

MASALA CHAI

You can add spices that suit your tastebuds or you could just add tea and cardamom pods for a mild flavor. I love my masala chai to be prepared in just whole milk but you could mix water in whole milk and prepare your tea if you don’t like your tea thick.

Ingredients:

Whole Milk – 1 cup

Sugar to taste

Loose Black Tea Leaves or Black Tea Powder – 2 Tsp

Green Cardamom Pods- 3nos

Whole black peppercorns- 2 nos

Fennel Seeds – 1/4 tsp

Cinnamon Stick- 1 no

Clove – 1 no

One thin slice of Fresh Ginger

Method:

Crush all the dry spices using a mortar and pestle and grate the ginger.

In a saucepan add milk, tea, sugar and crushed spices except for ginger.

Bring it to a boil. when the mixture boils add the ginger.

Turn off the heat and let steep for 2 minutes.

Strain out the tea leaves and spices through a sieve.

Serve with biscuits! enjoy!

Turmeric is one of the key ingredients in many Asian dishes, imparting a mustard-like, earthy aroma and pungent, slightly bitter flavor to foods. It is used mostly in savory dishes but also is used in some sweet dishes. It is a principal ingredient in curry powders. Although typically used in its dried, powdered form, turmeric also is used fresh, like ginger. It has numerous uses in East Asian recipes, such as pickle that contains large chunks of soft turmeric, made from fresh turmeric. [source: wiki] Turmeric is known for its anti-inflammatory properties and it is considered as an Ayurvedic medicine in India.

Everyone has their own version of making turmeric milk. This is my version. Some prefer to use non-dairy milk but I’ve used home milk in this recipe. Also, I prefer to use fresh ginger and whole spices.
