Very moist cake, full of flavor with delicious and rich chocolate buttercream slathered all over! Who wants to join me??

This cake has two awesome superfoods from @suncorefoods – Cacao nibs and Quinoa flakes which makes this cake healthier to enjoy!

And it’s a no butter, one bowl olive oil chocolate cake. You don’t need any fancy types of equipment to make it. Just a handheld mixer works! I can’t wait to share the recipe! Here you go!

Blood Orange Quinoa Chocolate Cake with Cacao Nibs  + Chocolate Buttercream

Ingredients:

Cake

All-purpose flour- 13/4 cup

Suncore Foods Quinoa flakes – 1/2 cup

Granulated sugar- 21/4 cup

Cocoa powder- 11/4 cup

Baking powder – 2tsp

Baking soda – 1/4 tsp

Water – 1cup

Freshly squeezed Blood orange juice – 1/2 cup

Espresso powder- 2 tsp

Vanilla extract – 2 tsp

Suncore foods rose Salt – 1 tsp

Large Eggs- 4 ( room temperature)

Suncore foods cacao nibs – 1/4 cup

Olive oil- 1 cup

Buttercream:

Unsalted butter- 12 oz( softened to room temperature)

Confectioners sugar- 3 cups

Cacao powder – 3-4 tbsp

Heavy cream- 1/4 cup

Salt- a generous pinch 

Method:

Preheat oven to 350f.

Line 3 6” baking pans with parchment paper.

Take all the ingredients in a large mixing bowl and beat all the ingredients except the cacao nibs, until it’s very well mixed using an electric mixer. Make sure to scrape the bottom while beating. Stir in the cacao nibs.

Divide the batter into the prepared pans and bake for 20-25 mins till done.

For the buttercream, beat the butter for 2 mins. Then add the other ingredients listed under buttercream and beat for 1 to 2 mins until fluffy. Frost as desired.

    Question–what if I don’t have rose salt, what could I swap?
