Banana sheet cake with cacao nibs and chocolate fudge frosting! A delicious banana cake  studded with @suncorefoods cacao nibs     and slathered with rich chocolate fudge frosting! A perfect snack cake for any time of the day!

It’s a one bowl olive oil cake! The batter  comes together so quickly. The frosting is so fudgy and delicious! Make sure to use a good quality chocolate bar. I highly recommend chocolate bars instead of chocolate chips for the frosting recipe!

Ingredients

Cake:

All-purpose flour – 3 cups

Brown sugar-1 cups

Granulated sugar – 1/2 cup

Baking powder-2 tsp

Baking Soda-1 tsp

Large Eggs – 4 ( room temperature)

Sour cream- 1 cup( room temperature )

Suncore foods Cacao nibs- 1/2 cup

Olive oil-3/4 cup

Suncore foods rose Salt-1 tsp

Cinnamon powder- 1 tsp

Vanilla extract – 1 tsp

Very Ripe Banana – 1 cup mashed

Buttercream:

Unsalted butter- 3 sticks  ( softened to room temperature)

Confectioners sugar- 2 cups

Heavy cream- 2 tbsp

70% good quality chocolate bar – 4 oz bar 

Salt- a generous pinch 

Cocoa powder – 3 tbsp

vanilla extract – 1 tsp

Espresso powder- 1 tsp

Method :

Preheat oven to 350f.

Grease a 9×13 “ sheet cake pan. Set aside. 

In a large bowl using a hand mixer beat together the eggs, oil, brown sugar, sugar vanilla extract, and sour cream until well combined.

Now dump in all the dry ingredients and beat till well combined. Lastly, fold in the cacao nibs and pour into the prepared sheet cake pan and bake for 30-40mins till done.

For the chocolate fudge frosting , melt the chocolate and set aside to cool at room temperature. Beat the butter for 2 mins. Then add the powdered sugar, salt , vanilla , cocoa powder and beat for 1 to 2 mins until smooth. Then add the melted cooled chocolate beat well till the color is well incorporated. Add in the heavy cream and espresso powder and beat until we’ll mixed. Frost as desired.
