Apple Quinoa Muffins with Cinnamon Butter

Apple Quinoa Muffins with Cinnamon Butter- Delicious and healthy apple muffins made with quinoa flakes and spiced with cinnamon and served with delicious cinnamon butter! With a glass of milk, it sounds like a perfect breakfast for fall! Isn’t??

Apple Quinoa Muffins with Cinnamon Butter

These muffins are so easy to whip up and it bakes to perfection every single time! I’ve used Suncore Foods Quinoa Flakes in this recipe. I highly recommend using them! You can add more chopped apples if you like. And adding some chopped walnuts or pecans makes the muffin even better! Make sure you make at least two batches of batter cause these muffins are highly addictive and it vanishes very soon. These muffins freeze very well. So if you have any extras just cling wrap them and pop them in the freezer. You can defrost them in the microwave for 30sec to 1 min whenever you want!

This is the recipe:

Apple Quinoa Muffins With Cinnamon butter

Ingredients:

Muffins:

All-purpose flour -2 cups

Suncore Foods Quinoa flakes – 3/4 cup

Baking powder – 3 tsp

Baking Soda – 1/2 tsp

Cinnamon powder- 1 tbsp

Vanilla extract – 1 tbsp

Sour cream ( room temperature) – 1/2 cup

Milk – 1/2 cup room temperature 

Granulated sugar-1/2 cup

Dark brown sugar -1/2 cup

Vegetable oil/olive oil/ avocado oil  – 1/3 cup

Unsalted butter – 6tbsp softened

Large egg – 2 number ( room temperature)

Salt – 1/4 tsp

Peeled and chopped apples- 2 cups

Cinnamon butter

Unsalted butter – 1 cup softened 

Honey – 1/4 cup

Powdered sugar-1 cup

Cinnamon powder- 1 tbsp

Salt -1/4 tsp

Method:

Preheat the oven to 375f.

Line the muffin pan. 

In a bowl whisk together all the dry ingredients ( flour, quinoa flakes, salt, baking powder, baking soda, and cinnamon).

In a bowl of a stand mixer fitted with a paddle attachment cream together the butter and both the sugars until light and fluffy for 2-3 mins.

Add the eggs and beat well. Add the vanilla extract and sour cream and beat well till it’s all well mixed. 

With the mixer on low, add half of the flour and mix well. Next,  add all the milk at one and give it a good mix. Now add the remaining flour and mix until just combined. Remove the bowl from the stand mixer and add the chopped apples and mix well.

Scoop the batter and fill all the muffin cups 3/4th to full of the batter. Bake in the preheated oven for 15- 20 mins till done.

Beat all the ingredients listed under cinnamon butter until fluffy and smooth. 

Spread cinnamon butter on the muffin and enjoy.
