Slow Cooker Rice Pudding or Kheer!! Super fragrant basmati rice slow cooked in whole milk sweetened with sugar and flavored with cardamom and topped with roasted whole pistachios and slivered almonds!! What a comfort food!! Humble yet soo delectable!!
It’s getting cold here and I was in the mood for a warm comforting Indian dessert! Cuddled on the couch while watching my boy playing around, thought for some time and decided to make none other than the humble Kheer as we all Indians call it!! This is another slow cooker recipe guys!! Yes, I’m really liking the slow cooker way of cooking nowadays! Saves a lot of time and the food comes out perfect without burning!! U can also make this in stovetop but make sure to stir in between and check to prevent burning!
This Kheer just needs very few ingredients some rice, whole milk, sugar cardamom and some nuts!! That’s it! Nothing complicated!! I prefer whole milk but you can add either fat-free or 2% milk too! This Kheer tends to thicken a bit while refrigerated, so just add a little milk and warm it up before you serve. You can also flavor it with saffron and add toppings of your choice! - 1/2 cup basmati rice
- 2 tbsp ghee/clarified butter
- 4 cups whole milk
- 4 crushed cardamom
- 1/2 cup sugar ( add more to taste )
- 1/2 cup sliced almonds and pistachio roasted in ghee/clarified butter
- Stovetop
- Wash and rinse the basmati rice.
- Heat a nonstick pan. Add milk, sugar, basmati rice and crushed cardamom.
- Let it simmer on a low flame till it reduces to half its original quantity for about an hour or so. Make sure to stir in between to prevent burning.
- once the rice is cooked add the roasted nuts and serve either warm or cold
- Slow Cooker Method
- Wash and rinse the basmati rice.
- Add milk, sugar, basmati rice and crushed cardamom to the crockpot and cook on low for 8 hours or high for 4 hours.
- Once the rice is cooked add the roasted nuts and serve either warm or cold.
